Orange Almond Cake

Ingredients:

  • 3 large sweet oranges or 4 smaller ones
  • 1 egg
  • 300 g (about 2 ½ cups) almond flour
  • 12 g (1 tbsp) baking powder
  • 2 tbsp maple syrup
  • 1 tsp bourbon vanilla
  • Stevia, to taste

Topping:

  • 50 g (about ⅓ cup) blanched almonds
  • Juice of 1 orange
  • 1 tbsp coconut blossom sugar

Instructions:

  1. Preheat the oven to 180°C / 356°F.
  2. Peel the oranges, remove any seeds, and blend them into a smooth purée.
  3. In a separate bowl, mix the almond flour and baking powder.
  4. Lightly grease a small round baking tin.
  5. In another bowl, beat the egg using a mixer.
  6. Add the orange purée, bourbon vanilla, maple syrup, almond flour mixture, and stevia to taste. Mix everything well by hand until combined.
  7. Pour the batter into the prepared tin and bake for about 30 minutes.
  8. Near the end of baking, lightly toast the blanched almonds in a pan over medium heat. Add the coconut blossom sugar and stir until it melts. Pour in the orange juice and continue stirring as it reduces slightly. Spoon the almond mixture over the top of the cake.
  9. Let the cake cool completely in the tin before serving.
