Flourless Chocolate Peanut Cake

Ingredients:

  • 150 g dark chocolate
  • 80 g cocoa butter
  • 4 eggs
  • 100 g roasted unsalted peanuts
  • 100 g roasted almonds
  • 5 tbsp decaffeinated instant coffee
  • 1 tsp bourbon vanilla extract
  • Stevia, to taste

Instructions:

  1. Preheat the oven to 180⁰C (356⁰F).
  2. Lightly grease a small round baking pan and line the bottom with parchment paper.
  3. Toast the almonds and peanuts over medium heat until fragrant, stirring frequently. Let cool slightly, then grind them.
  4. Melt the chocolate and cocoa butter together over low to medium heat, stirring occasionally.
  5. In a separate bowl, beat the eggs until light and frothy.
  6. Add the ground nuts, melted chocolate and cocoa butter, instant coffee, and vanilla. Sweeten with stevia to taste, and stir everything together until well combined.
  7. Pour the batter into the prepared pan and bake for about 20 minutes. Check with a toothpick inserted into the center — it should come out slightly moist, but without raw batter.
  8. Let the cake cool completely before removing from the pan. Invert onto a plate or board and peel off the baking paper from the bottom.
