Peanut Butter Cookies


Ingredients:

  • 3 eggs 
  • 150g (5.3 oz) fresh low-fat cheese 
  • 100g (3.5 oz) almond flour 
  • 150g (5.3 oz) oat flour 
  • 10g (0.35 oz) baking powder
  • 180g (6.35 oz) chocolate peanut butter (or 140g peanut butter + 40g dark chocolate) 
  • 2 tbsp honey 
  • Stevia, to taste
  • Roasted, unsalted peanuts for decoration 

Instructions:

  1. Preheat the oven to 170⁰C (338⁰F).
  2. If using pre-mixed chocolate peanut butter, blend it briefly with a mixer for a smoother texture. If not, melt the dark chocolate and mix it into the peanut butter.
  3. In a separate bowl, combine the almond flour, oat flour, and baking powder.
  4. Beat the eggs until fluffy, then add the honey, low-fat cheese, and chocolate peanut butter.
  5. Sift the flour mixture into the wet ingredients and mix everything with your hands. Adjust sweetness with steviato taste.
  6. Transfer the dough into a piping bag or use a shaping tool to form round cookies or shapes of your choice.
  7. Place a piece of peanut on top of each cookie for decoration.
  8. Bake for 10 minutes.
