Oat Carob Protein Cake

Ingredients:

  • 1 cup oat flour
  • 1 cup carob powder
  • 250 g (17.64 oz) quark cheese
  • 1 cup low-fat yogurt
  • 200 ml (6.8 fl oz) whipping cream 
  • ½ cup sparkling water
  • 1 teaspoon bourbon vanilla
  • 1 teaspoon baking soda
  • Lemon zest
  • 100 g (3.53 oz) dark chocolate
  • Stevia to taste 

Instructions:

  1. Preheat the oven to 170°C (338°F) and lightly grease the baking pan.
  2. In a bowl, sift together the oat flour, carob powder, and baking soda to remove any lumps.
  3. Add the lemon zest, bourbon vanilla, quark cheese, yogurt, and whipping cream. Mix by hand until combined.
  4. Gradually add the sparkling water, continuing to mix by hand. Then, use a mixer to achieve a smooth consistency.
  5. Mix in stevia to taste. 
  6. Pour the batter into the prepared baking pan.
  7. Melt the dark chocolate over low heat.
  8. Drizzle the melted chocolate over the batter, creating horizontal lines. Then, use a skewer to drag through the lines vertically, forming a leaf-like pattern.
  9. Bake for 40-45 minutes. Check doneness with a toothpick—it should come out slightly moist but no raw batter.
  10. Let the cake cool completely before slicing.
