Light Apple & Strawberry Cake

Ingredients:

  • 1 kg (2.2 lbs) apples
  • 200 g (7 oz) strawberries (optional)
  • 3 eggs
  • 100 g (3.5 oz) ground carob
  • 100 g (3.5 oz) oat flour
  • 150 ml (5 fl oz) unsweetened oat milk
  • 100 ml (3.4 fl oz) yogurt
  • 12 g (0.4 oz) baking powder
  • 1 tsp bourbon vanilla
  • 1 tbsp date syrup
  • Liquid stevia, to taste


Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. Wash, peel, and thinly slice the apples.
  3. Wash the strawberries and blend them into a puree using a hand blender.
  4. Line a small, deep baking dish with parchment paper.
  5. In a bowl, beat the eggs until fluffy.
  6. Sift in the oat flour, baking powder, and ground carob.
  7. Add the yogurt, oat milk, and bourbon vanilla. Mix well and sweeten with stevia to taste.
  8. Arrange the apple slices in the baking dish.
  9. Sweeten the strawberry puree with date syrup and pour it over the apples.
  10. Pour the batter over everything and gently shake the dish to even it out.
  11. Bake for 50 minutes.
  12. Once cooled, place a board over the baking dish and flip the cake so that the apples are on top. Remove the parchment paper.
