Juicy Apple Cake


Ingredients:

  • 3 eggs
  • 3 medium apples (2 pureed, 1 thinly sliced)
  • 100g Greek yogurt
  • 50g light butter
  • 5 tbsp maple syrup
  • 10g baking powder
  • Stevia to taste (adjust according to apple sweetness)
  • 1-2 tsp vanilla sugar or vanilla powder (optional)

Instructions:

  1. Preheat the oven to 180⁰C/356⁰F.
  2. Puree two peeled and cored apples in a blender.
  3. Thinly slice one peeled and cored apple.
  4. Melt butter over low heat.
  5. Line a medium-sized baking pan with parchment paper.
  6. Beat eggs until fluffy.
  7. Combine flour and baking powder.
  8. Add the applesauce, Greek yogurt, and maple syrup to the beaten eggs and mix well.
  9. Add the flour mixture and mix; then stir in the melted butter.
  10. Add stevia to taste, if needed.
  11. Pour the batter into the prepared pan and spread evenly.
  12. Arrange the sliced apples on top and sprinkle with vanilla sugar (optional).
  13. Bake for about 25-30 minutes, adjusting time based on pan size and cake thickness. Check for doneness with a toothpick; it should come out clean.
