Flourless Chocolate Walnut Cake


Ingredients for the Cake (for two layers): 

  • 260 g ground walnuts 
  • 140 g dates or sugar-free date paste 
  • 120 ml boiling water 
  • 2 teaspoons baking soda 
  • 10 egg whites 
  • A pinch of salt

Ingredients for the Cream: 

  • 150 g cocoa butter 
  • 200 g dark chocolate 
  • 100 g coconut flower sugar 
  • 30 ml coffee 
  • 10 egg yolks 
  • 1 teaspoon bourbon vanilla 
  • Zest of 1 lemon

Glaze: 

  • 100 g dark chocolate 
  • 200 ml heavy cream 
  • Stevia to taste




Instructions for the Cake Layers: 

  1. Preheat the oven to 180°C (356°F). 
  2. Bake the layers in a lightly greased cake pan lined with parchment paper. Prepare one layer with half of the ingredients, then prepare the second layer with the remaining ingredients, or mix all at once and divide into two equal portions. 
  3. Whip the egg whites until stiff peaks form. Add the salt and mix gently. 
  4. Pour the date paste over the boiling water and stir until uniform (or blend the dates with water after they soften). 
  5. Gently fold the ground walnuts into the egg whites until well combined. 
  6. Add the date mixture and mix well. 
  7. Evenly distribute the mixture in the pan and bake for about 15 minutes.


Instructions for the Cream: 

  1. In a double boiler, whisk the egg yolks with the coconut flower sugar until the mixture thickens. 
  2. Add the cocoa butter and dark chocolate. Stir until smooth. 
  3. Finally, add the bourbon vanilla, lemon zest, and coffee. Mix well and let the cream cool.

Note: Cocoa butter creates a thick consistency in the cream, so do not wait for it to harden completely, as it will be harder to spread. If it does harden, gently warm the cream over low heat while stirring to soften it. It does not need to be perfectly smooth, just soft enough to spread on the layers.


Instructions for the Glaze: 

  1. Over low heat, stir the dark chocolate into the heavy cream until completely melted. 
  2. Let the cream cool to thicken slightly, but do not let it harden completely.


Assembling the Cake: 

  1. Divide the cream into two parts. 
  2. Spread one half of the cream over one layer, place the second layer on top, and spread the remaining cream over it. 
  3. Pour the glaze over the top.
