Rustic Apple & Walnut Bliss

Apple Walnuts Cake

Ingredients:

  • 200 g (7.05 oz) whole-grain spelt flour
  • 100 g (3.53 oz) Greek yogurt
  • 80 g (2.82 oz) date powder (or sweetener of choice)
  • 3 eggs
  • 100 g (3.53 oz) chopped walnuts
  • ½ tsp bourbon vanilla powder or 1 tbsp bourbon vanilla extract
  • 1 tsp cinnamon
  • 10 g (0.35 oz) baking powder
  • Zest of 1 lemon
  • Zest of 1 orange
  • 2 large grated apples (about 400 g / 14.11 oz grated apples)
  • Stevia to taste (optional, to taste)

Instruction: 

  1. Lightly oil a baking pan.
  2. Chop the walnuts, and grate the lemon and orange zest.
  3. Wash, peel, and grate the apples.
  4. Preheat the oven to 170°C / 338°F.
  5. Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form.
  6. Mix the Greek yogurt and date powder. Add the egg yolks and beat well.
  7. Combine the flour with the baking powder.
  8. To the yogurt mixture, add vanilla, lemon and orange zest, flour with baking powder, and beaten egg whites. Gently stir to combine, then blend with a mixer until smooth.
  9. Taste and add stevia if desired, then pour the batter into the prepared pan.
  10. Mix the grated apples with cinnamon, then spread evenly over the batter. Sprinkle the chopped walnuts over the apples, pressing them slightly into the apple layer.
  11. Bake at 170°C / 338°F for about 35 minutes, or until the walnuts are golden. Check with a toothpick—it should come out slightly moist from the apples but without batter on it.
