Pistachio Energy Balls

Ingredients:

  • 200 g pitted dates (about 1 ⅓ cups)
  • 100 g pistachios (¾ cup)
  • Juice of ½ an orange
  • A little water (if needed)

Instructions:

  1. Blend the dates, pistachios, and orange juice in a food processor until smooth. Add a small amount of water if needed.
  2. Shape the mixture into small balls and refrigerate until firm. 


Peanut Energy Balls

Ingredients:

  • 100g unsalted peanuts (about ¾ cup)
  • 50g almonds (⅓ cup)
  • 100g quinoa flakes (or oats) (1 cup)
  • 4 tablespoons Greek yogurt
  • 3 tablespoons agave syrup
  • 1–2 tablespoons water (if needed)

Instructions:

  1. Place all ingredients into a blender and blend until smooth.
  2. If the mixture is too dry, add a little water until it reaches a consistency that allows you to shape small balls by hand.
