Chocolate Almond Delight

Ingredients:

  • 2 eggs
  • 60 g (2.1 oz) ground carob powder
  • 250 g (8.8 oz) almond flour
  • 100 g (3.5 oz) dark chocolate
  • 120 g (4.2 oz) ground almonds or hazelnuts
  • 1 tbsp cocoa powder
  • 2 tbsp bourbon vanilla extract
  • 1 tsp baking powder
  • 100 g (3.5 oz) Greek yogurt (2% fat)
  • 50 g (1.75 oz) light cream cheese
  • Stevia to taste (to taste, about 30 drops or more)
  • Powdered date or powdered sweetener of choice

Instructions:

  1. Preheat the oven to 170⁰C/338⁰F.
  2. Grind the hazelnuts or almonds and dark chocolate.
  3. In a bowl, beat the eggs until frothy. Add Greek yogurt, cream cheese, and vanilla, mixing until smooth.
  4. In a separate mixing bowl, combine the dry ingredients: almond flour, ground carob, cocoa powder, baking powder, ground nuts, and ground chocolate.
  5. Combine the dry and wet ingredients, first using a spoon, then kneading gently by hand to form a compact dough.
  6. Form small balls with your hands, flatten them slightly, and place them on a baking sheet lined with parchment paper.
  7. Bake for about 18-20 minutes. Once removed from the oven, dust with powdered date sugar or your preferred powdered sweetener.

Tips:

  • If needed, sift the carob powder to remove lumps.
  • Gloves are recommended for handling the dough.
