Aromatic Swirls

Ingredients:

  • 150 g (5.3 oz) whole-grain spelt flour
  • 100 g (3.53 oz) almond flour
  • 100 g (3.53 oz) carob powder
  • 1 egg
  • 100 g (3.53 oz) Greek yogurt
  • 12 g (0.42 oz) baking powder
  • A pinch of salt
  • 2–3 tbsp water
  • Stevia to taste (about 30 drops)

Filling:

  • 100 g (3.53 oz) ground walnuts
  • 50 g (1.76 oz) ground almonds
  • 80 ml (2.7 fl oz) boiling milk
  • 1 tbsp bourbon vanilla
  • 7 g (0.25 oz) spice blend (gingerbread mix or a combination of cinnamon, nutmeg, ginger, and cloves in desired ratios)

Instructions:

  1. Preheat the oven to 170°C (338°F).
  2. Sift the carob powder if needed.
  3. Mix the dry ingredients: spelt flour, almond flour, carob powder, baking powder, and salt.
  4. Add the egg, Greek yogurt, stevia, and gradually add water until a smooth but firm dough forms.
  5. Let the dough rest while preparing the filling. Mix ground walnuts, almonds, and spices. Pour boiling milk over the mixture, add vanilla, and stir until cohesive.
  6. Divide the dough into two parts. Roll each into a rectangle about 15 cm wide and 2 mm thick. Spread half of the filling on each, roll into logs, and seal the edges.
  7. Slice into ½ cm pieces, shape them if needed, and place on a baking sheet lined with parchment paper.
  8. Bake for 12–14 minutes.
