Plum & Apple Oat Cake

Ingredients:

  • 150 g (5.29 oz) whole grain spelt flour
  • 150 g (5.29 oz) oat flour
  • 4 tbsp ground poppy seeds
  • 10 g (0.35 oz) baking powder
  • 80 g (2.82 oz) birch sugar
  • 130 g (4.58 oz) Greek yogurt
  • 4 eggs
  • 4 tbsp sparkling mineral water

Filling:

  • Around 500 g (17.64 oz) plums
  • 2 apples
  • 1 tsp cinnamon
  • 1 tbsp date sugar (or sweetener of choice, like stevia)

Instructions:

  1. Wash the plums, remove the pits, and chop them into small pieces.
  2. Wash, peel, and grate the apples.
  3. Combine the plums and apples, adding cinnamon and sweetener to taste. Mix well.
  4. Lightly grease a baking tin.
  5. Preheat the oven to 170°C (338°F).
  6. If necessary sift and mix the spelt and oat flour with baking powder.
  7. Beat the eggs and birch sugar until frothy.
  8. Add ground poppy seeds, Greek yogurt, and the mixed flours. Mix thoroughly.
  9. Spread a portion of the batter on the bottom of the greased tin, enough to cover it.

  1. Bake in the preheated oven for about 5 minutes, just until the surface forms a thin crust.
  2. Remove from the oven and spread the fruit filling over the base.
  3. Stir the mineral water into the remaining batter, then pour it evenly over the fruit filling.

  1. Return the cake to the oven and bake for around 20 minutes.
  2. Check if the cake is baked by inserting a toothpick in the center—it should come out clean.
