Citrus Oat Cake

Citrus Oat cake

Ingredients: 

  • 3 eggs 
  • 100 g whole spelt flour 
  • 160 g oat flour 
  • 90 g Greek yogurt 
  • 2 tablespoons olive oil 
  • Zest and juice of 1 lemon 
  • Zest and juice of 1 orange 
  • 60 g chopped dates or sugar-free date paste 
  • 2 tablespoons honey 
  • 10 g baking powder 
  • Stevia to taste

Instructions: 

  1. Preheat the oven to 170°C (338°F).
  2. Grate the zest of the lemon and orange, and squeeze out the juice.
  3. Blend the chopped dates or prepared date paste with the orange and lemon juice.
  4. In a mixing bowl, whisk the eggs together with the honey and zest of lemon and orange until frothy.
  5. Sift the flours and baking powder into the egg mixture.
  6. Add the Greek yogurt and the date-and-juice mixture. Mix well by hand first, then use an electric mixer to combine everything thoroughly.
  7. Add stevia to taste (about 30 drops was sufficient for me).
  8. Evenly spread the batter into a loaf pan lined with parchment paper.
  9. Bake the cake for about 30 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
