Decadent Chocolate Blossoms


Ingredients:

  • 200 g dark chocolate
  • 80 g light butter
  • 80 g pitted dates or date paste
  • 60 ml boiling water
  • 1 tsp baking soda
  • 1 egg
  • 1 tbsp bourbon vanilla extract
  • 200 g whole-grain spelt flour
  • 2 tsp ground almonds
  • 1 tbsp coconut sugar

Instructions:

  1. Pour boiling water over the dates and baking soda, stirring until a smooth mixture forms.
  2. Melt the butter and chocolate over low heat.
  3. Whisk the egg and vanilla extract until frothy. Add the date mixture and melted chocolate and butter, mixing well.
  4. Gradually add the spelt flour, stirring until combined. Wrap the dough in plastic wrap and refrigerate for about 2 - 3 hours.
  5. Preheat the oven to 180°C/356°F.
    Tip: If the dough feels too firm after chilling, let it sit at room temperature for a ten minutes and knead lightly to soften.
  6. Mix the ground almonds and coconut sugar in a small bowl.
  7. Shape the dough into small balls with your hands, then roll them in the almond-sugar mixture. Gently press the mixture into the surface of the dough by rolling the balls between your palms again.
  8. Place the balls on a baking tray lined with parchment paper. Roll each ball in the almond-sugar mixture again to ensure even coating.
  9. Bake until the cookies are set, about 12-14 minutes.
