Aromatic Cake


Ingredients: 

  • 200 g almond flour 
  • 2 eggs 
  • 60 g ground carob 
  • 60 g chopped dates 
  • 60 g cocoa butter 
  • 1 tablespoon baking soda 
  • Zest and juice of 1 orange 
  • 50 g dark chocolate 
  • About 3 tablespoons almond flakes


Instructions: 

  1. Preheat the oven to 180°C (356°F).
  2. Grease and line a round cake pan with parchment paper.
  3. Melt the cocoa butter over medium heat and let it cool slightly.
  4. In a mixing bowl, thoroughly combine the dry ingredients: almond flour, carob, baking soda, and orange zest.
  5. In a separate bowl, whip the eggs until frothy.
  6. Add the eggs to the dry ingredients along with the orange juice and melted cocoa butter.
  7. Mix in the chopped dates.
  8. Stir everything well by hand until you have a uniform mixture.
  9. Evenly spread the batter into the prepared baking pan.
  10. Bake the cake for about 25 minutes. When checking with a toothpick, it should come out slightly moist but without any batter.
  11. Allow the cake to cool before removing it from the pan and peeling off the parchment paper.
  12. Melt the chocolate over low heat and pour it over the surface of the cake.
  13. Lightly toast the almond flakes until they turn a nice golden color and scatter them over the chocolate. Gently press them down with a spoon to help them adhere to the chocolate.
