Almond Spice Cookies

Ingredients:

  • 100 g (3.5 oz) almond flour
  • 100 g (3.5 oz) whole-grain spelt flour
  • 1 tbsp coconut sugar
  • 2 tbsp ground carob
  • 1 egg
  • ½ tsp baking soda
  • A pinch of salt
  • ~10 g (0.35 oz) spice mix (e.g., cinnamon, nutmeg, ginger, cloves, or pre-made gingerbread spice mix)
  • Zest of 1 lemon
  • 4 tbsp water

For Topping:

  • 4 tbsp coarsely ground, roasted almonds
  • 1 tbsp coconut sugar

Instructions:

  1. Preheat the oven to 170°C (338°F).
  2. Mix the dry ingredients: flours, baking soda, salt, spice mix, coconut sugar, and carob powder.
  3. Add the egg and water. Knead by hand into a soft dough.
  4. Roast the almonds in a pan over medium heat until fragrant. Mix with coconut sugar.
  5. Sprinkle half of this almond-sugar mixture on your rolling surface. Roll out the dough, cut shapes using cookie cutters, and place on a baking sheet lined with parchment paper.
  6. Gather the remaining dough, combine it with all the rest of the almond-sugar mixture, and repeat the process.
  7. Bake the cookies for about 10 minutes.
